El Retiro is a Guatemalan farm situated in the Acatenango region. It spans 70 hectares, growing Bourbon variety coffee at elevations of 1,500 - 1,700m above sea level. The Alburez-Ortega Family has owned it since 1832, producing Cup of Excellence award-winning coffee.
Processing: At El Retiro, the coffee harvest starts in January, allowing slow maturation for higher sugar content. Hand-picked cherries undergo depulping, 18 hours of fermentation, washing, and pre-drying on concrete patios for two days. Then, they dry on raised beds for 8-10 days before being rested in parchment and exported.
