Coffee cultivated in the high-altitude terrains around China Alta village, Tolima, Colombia, by eight smallholder producers, yielding sweet, refined beans alongside the Rio La China's banks.
Processing: At their micro-mills, the coffee undergoes the washed process. After hand-harvesting, it's pulped manually or with electric tools. Then, it ferments for about 48 hours, followed by washing with river water. The beans dry meticulously on parabolic beds over 10-18 days in greenhouse-like structures, safeguarding them from rain and ensuring slow, even drying before export.
